    Cucumber Ginger Lime Mocktail

    This Cucumber Ginger Lime Mocktail is so refreshing and hydrating! You can make it in a blender and strain, plus I’ve got a tutorial on how to make pretty cucumber garnishes for your drinks.

    Cucumber is one of my favorite things to eat to stay hydrated during the summer, or any month for that matter! And when you blend it with water, it creates the most refreshing flavor.

    I found blending the cucumber was the fastest way to infuse it into this drink, as soaking it required a lot more cucumbers and more time.  I also added fresh ginger to release the aroma and flavor of this spicy and zesty root.

    My blender did the trick at bringing out the flavor, while straining it helped to get it nice and smooth.

    If you are in the market for an incredible yet affordable blender, I purchased this Nutribullet Blender which comes with the blender base plus a large and small blender for blending a larger or smaller portion of ingredients. It also has an agitator which comes in handy for breaking things up in the blender.

    How to make cucumber garnishes

    If you’re feeling fancy and want to make these drinks look restaurant-worthy, I’ve got a few options for making cucumber garnishes with either the skins of the cucumbers, or with strips of cucumbers.

    • The simplest option is just to thinly slice cucumber circles and serve with the drink
    • For cucumber strips, use a mandolin (with a guard so you don’t slice your hand) to slice them thin. This mandolin is great for all kinds of slicing options.
    • You can use one or two slices wrapped on the inside of the glasses.
    • To shape the thin slices (sliced down the length of the cucumber) fold them in half long ways and roll. Stick a cocktail pick or unflavored toothpick through the roll to hold its shape.
    • Another option is to shape the long slice or the skin like an accordion, then put the cocktail pick through to secure.
    • Since you need to remove the skins of the cucumbers for this recipe, you can reserve the skins and wrap them around a straw and roll a moist paper towel around them to let them hold their shape. Keep refrigerated and covered until ready to serve. Gently remove them from the straw and place in the glass.
    • All of these options can be done in advance if you’re serving this to guests. Just keep them covered in the fridge (even the glasses with cucumber slices) until ready to serve.

    Cocktail picks and bar tools

    You don’t technically need any of these items for the drinks but they are a fun way to present them.

    • These are the cocktail picks I use in the photos and they come in several different color options
    • After blending the cucumber drink you’ll want to strain the liquid since it gets foamy. Use a strainer or pour it into a cocktail shaker with the strainer on and strain in your glass

    Cucumber Ginger Lime Mocktail

    This cucumber ginger lime mocktail is such a refreshing non-alcoholic drink!

    Ingredients

    • 2 cucumbers skins removed
    • 4 cups water
    • 10-15 sprigs fresh mint plus more for garnish if you'd like
    • 3 inch slice fresh ginger
    • 2 TBSP honey
    • 2 limes juiced
    • splash of club soda for each glass
    • ice for each glass

    Instructions

    • Skin the cucumbers with a vegetable peeler. If you want to use the skin as a garnish, reserve some of the pieces.
    • Blend the cucumber (no need to remove the seeds), the fresh ginger, fresh mint, lime juice, and honey with the water.
    • Use a strainer to strain the solids when pouring over each glass, discard the solids. Or you can pour the drink into a cocktail shaker with the strainer on top and strain into glasses that way. Add ice into glasses and strain the drink into the glasses.
    • Pour a splash of club soda over the top and serve with another sprig of fresh mint and cucumber slices of choice.

    How to make cucumber garnishes

    • Option 1:
